Vanilla Caramel Custard Tart

Ingredients
  

  • 1¾ cups all-purpose flour 220g
  • ½ cup icing sugar sifted, 60g
  • ¼ teaspoon fine salt
  • ¾ cup unsalted butter cold and diced, 170g
  • 1 large egg yolk
  • 2-3 tablespoons ice water
  • 2 cups whole milk 480ml
  • 1 cup heavy cream 240ml
  • 1 vanilla bean split and scraped, or 2 tsp vanilla extract
  • 5 large egg yolks
  • 2 large whole eggs
  • ⅔ cup granulated sugar 135g
  • 3 tablespoons cornstarch
  • ¾ cup granulated sugar for caramel, 150g
  • 3 tablespoons water for caramel
  • 2 tablespoons heavy cream warmed, for caramel
  • 1 tablespoon unsalted butter for caramel

Method
 

  1. Make the pastry: Pulse flour, icing sugar, and salt in a food processor. Add cold butter and blitz until mixture resembles coarse sand.
  2. Add egg yolk and 1 tablespoon ice water. Pulse and add more water until dough clumps. Form into disc, wrap, and chill 1 hour.
  3. Roll dough to 3mm thickness between parchment. Fit into 9-inch tart pan, trim excess, and prick base. Freeze 20 minutes.
  4. Preheat oven to 350°F (175°C). Line pastry with parchment and pie weights. Blind bake 20 minutes, remove weights, bake 10-12 minutes more until golden. Cool completely.
  5. Make custard: Heat milk, cream, and vanilla bean to simmer. Remove from heat and steep 15 minutes.
  6. Whisk egg yolks, whole eggs, sugar, cornstarch, and salt until pale, about 2 minutes.
  7. Remove vanilla pod. Temper eggs by slowly whisking in half the hot milk. Return to saucepan and cook over medium-low, stirring constantly, until custard coats spoon (170°F), 5-7 minutes.
  8. Strain custard through fine-mesh sieve. Pour into cooled pastry shell. Reduce oven to 300°F (150°C).
  9. Bake tart 35-45 minutes until edges set but center wobbles gently. Cool completely, then refrigerate 4 hours or overnight.
  10. Make caramel: Cook sugar and water over medium-high without stirring until deep amber, 6-8 minutes. Remove from heat and whisk in cream and butter.
  11. Cool caramel 5 minutes. Pour over chilled tart and tilt to spread. Set 15-20 minutes before slicing with warm knife.

Notes

  • Use room temperature eggs for smoother custard
  • Don't skip the straining step for silky texture
  • Apply caramel just before serving for best crackle
  • Tart can be made 2 days ahead without caramel topping
