Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup hot coffee
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 1/2 cups heavy whipping cream
  • 6 ounces white chocolate melted and cooled
  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream for ganache
  • as needed chocolate curls or shavings for finishing

Method
 

  1. Preheat the oven and line a rectangular pan with parchment paper.
  2. Whisk the dry ingredients together in one bowl.
  3. In another bowl, mix the eggs, sugars, oil, buttermilk, and vanilla until smooth.
  4. Add the dry ingredients, then stir in the hot coffee to make a thin batter.
  5. Bake until set, then cool the cake completely before layering.
  6. Beat the cream cheese with powdered sugar, then fold in whipped cream and melted white chocolate.
  7. Spread the cream mixture over the cooled cake and chill until firm.
  8. Heat the heavy cream and pour it over the chocolate chips to make ganache.
  9. Pour the ganache on top, finish with curls, chill again, and slice into bars.

Notes

  • Chill the cake before slicing for cleaner bars.
  • Use good chocolate for the best flavor.
  • Store covered in the refrigerator for up to 4 days.
