Ingredients
  

  • 2 cans tuna in water about 5 ounces each, drained well
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 stalk celery finely chopped
  • 2 tablespoons red onion finely chopped
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • to taste salt and freshly ground black pepper
  • 8 slices sourdough, rye, or whole wheat bread
  • 2 tablespoons butter softened
  • 4 slices sharp cheddar cheese
  • 4 slices mozzarella or provolone cheese
  • 1 medium tomato thinly sliced and patted dry

Method
 

  1. Prepare the tuna mixture: Combine drained tuna, mayonnaise, lemon juice, celery, red onion, parsley, Dijon mustard, garlic powder, salt, and pepper in a bowl.
  2. Butter the bread: Spread softened butter on one side of each bread slice.
  3. Build the sandwiches: Place four slices buttered-side down in a skillet. Add cheddar, tuna mixture, tomato, and mozzarella or provolone. Top with the remaining bread, buttered-side up.
  4. Cook the first side: Cook over medium-low heat for 3 to 5 minutes, until the underside is golden and the cheese begins to melt.
  5. Flip and finish: Turn the sandwiches carefully and cook until the second side is crisp and the cheese is fully melted. Rest for 2 minutes, then slice and serve.

Notes

  • Drain the tuna thoroughly to prevent soggy bread.
  • Use medium-low heat so the bread browns evenly while the cheese melts.
  • Pat tomato slices dry before adding them to the sandwiches.
  • Store prepared tuna mixture in the refrigerator for up to 2 days.
