Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup fine shredded coconut
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground ginger
  • 1/2 cup unsalted butter softened
  • 1/2 cup light brown sugar
  • 1/3 cup mango puree
  • 1 tsp vanilla extract
  • 2 tbsp finely chopped dried mango optional

Method
 

  1. Whisk the flour, coconut, baking powder, baking soda, salt, and ginger in a bowl.
  2. Cream the butter and brown sugar until smooth, then mix in the egg yolk, mango puree, and vanilla.
  3. Fold in the dry ingredients just until combined, then stir in the chopped dried mango if using.
  4. Scoop the dough onto a lined tray and bake until the edges are lightly golden and the centers are set.
  5. Cool on the tray for a few minutes before transferring to a rack.

Notes

  • Use thick mango puree for the best texture.
  • Chill the dough if it feels too soft.
  • Store in an airtight container for short-term keeping.
