The Creamiest Chicken with Sun-Dried Tomatoes

Tender chicken breasts in a rich, velvety cream sauce with intensely flavored sun-dried tomatoes and fresh spinach. This one-pan low carb dinner comes together in 30 minutes.

Ingredients
  

  • 4 pieces boneless skinless chicken breasts about 6 ounces each, pounded to even thickness
  • 2 tablespoons sun-dried tomato oil from the jar
  • 1 cup sun-dried tomatoes packed in oil, drained and chopped
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup parmesan cheese freshly grated
  • 2 cups fresh spinach leaves
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes optional
  • to taste salt and black pepper freshly ground
  • 2 tablespoons fresh basil chopped, for garnish

Method
 

  1. Season chicken breasts on both sides with salt, pepper, and Italian seasoning. Pound to even 3/4-inch thickness if needed.
  2. Heat sun-dried tomato oil in a large skillet over medium-high heat until shimmering. Add chicken and sear undisturbed for 5-6 minutes until golden brown.
  3. Flip chicken and cook another 5-6 minutes until internal temperature reaches 165°F. Remove to a plate and tent with foil.
  4. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1 minute until fragrant.
  5. Pour in chicken broth to deglaze, scraping up browned bits. Add heavy cream, parmesan cheese, and red pepper flakes. Whisk and simmer 3-4 minutes until sauce thickens.
  6. Stir in fresh spinach and let wilt for 1-2 minutes. Return chicken to skillet, spoon sauce over each piece, and heat through for 2-3 minutes.
  7. Garnish with fresh basil and serve immediately while sauce is creamy and warm.

Notes

  • For even cooking, pound chicken breasts to uniform thickness before seasoning
  • Reserve the oil from sun-dried tomatoes - it adds incredible flavor to the sauce
  • Don't boil the cream sauce vigorously or it may separate
  • Let sauce reduce naturally for best thickness without adding thickeners
  • Serve over cauliflower rice or zucchini noodles for complete low carb meal
