  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest finely grated
  • 1/4 cup fresh lemon juice
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 1 cup fresh strawberries finely diced and patted dry
  • 1 cup powdered sugar for glaze
  • 1 tablespoon strawberry puree strained
  • 1 to 2 tablespoons fresh lemon juice for glaze

Method
 

  1. Heat the oven to 350°F. Line a 9-inch square pan with parchment paper.
  2. Beat the butter and sugar until creamy. Add the egg, lemon zest, and lemon juice.
  3. Whisk together the flour, baking powder, and salt. Stir the dry ingredients into the wet mixture until just combined.
  4. Fold in the diced strawberries, then spread the thick batter evenly in the prepared pan.
  5. Bake for 30 to 35 minutes, until the edges are lightly golden and the center is set with a few moist crumbs.
  6. Cool completely. Whisk the powdered sugar, strawberry puree, and lemon juice into a smooth glaze.
  7. Spread the glaze over the cooled blondies, let it set, then slice and serve.

Notes

  • Use fresh, dry strawberries for the best texture.
  • Do not overbake because the bars should remain soft and tender.
  • Cool completely before glazing and slicing.
  • Store loosely covered at room temperature for up to two days or refrigerate for up to five days.
