Strawberry Chicken Salad

Ingredients
  

  • 1 pound boneless skinless chicken breasts pounded to even thickness
  • 2 tablespoons olive oil divided
  • 1 teaspoon salt plus more for seasoning
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 6 cups mixed greens romaine and baby spinach
  • 2 cups fresh strawberries hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup candied walnuts or pecans
  • 1/4 cup red onion thinly sliced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/3 cup olive oil for dressing

Method
 

  1. In a small bowl, whisk together 2 tablespoons olive oil, 1 teaspoon salt, 1/2 teaspoon pepper, garlic powder, and dried thyme. Rub mixture all over chicken breasts, coating both sides. Let sit at room temperature for 15 minutes.
  2. Heat grill pan or outdoor grill over medium-high heat. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes before slicing into strips.
  3. While chicken rests, prepare mixed greens in a large bowl. Top with sliced strawberries, red onion, feta cheese, and candied walnuts.
  4. For the dressing, combine remaining strawberries, balsamic vinegar, honey, and Dijon mustard in a blender. Blend until smooth, then slowly drizzle in 1/3 cup olive oil while blending. Season with salt and pepper to taste.
  5. Slice rested chicken into strips. Arrange over prepared salad. Drizzle with strawberry balsamic dressing just before serving. Toss gently and enjoy immediately.

Notes

  • Pound chicken to even thickness for uniform cooking
  • Make dressing ahead and store separately for up to 3 days
  • Add dressing just before serving to prevent soggy greens
  • Use ripe but firm strawberries for best texture
