Spicy Salmon Cakes with Sriracha Aioli

Ingredients
  

  • 1 pound fresh salmon fillet skin removed and flaked
  • 1/2 cup panko breadcrumbs
  • 1/4 cup mayonnaise for the cakes
  • 1 large egg lightly beaten
  • 2 tablespoons fresh cilantro finely chopped
  • 2 green onions thinly sliced
  • 1 tablespoon sriracha sauce plus more for aioli
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • salt and black pepper to taste
  • 2 tablespoons olive oil for pan-frying
  • 1/3 cup mayonnaise for the aioli
  • 1 tablespoon sriracha sauce for the aioli
  • 1 teaspoon lime juice or lemon juice
  • 1 small garlic clove minced

Method
 

  1. Cook salmon fillet in a skillet over medium heat for 4-5 minutes per side until just cooked through. Let cool slightly, then flake into small pieces with a fork.
  2. In a large bowl, combine flaked salmon, panko breadcrumbs, mayonnaise, beaten egg, cilantro, green onions, sriracha, garlic powder, smoked paprika, salt, and pepper. Mix gently but thoroughly.
  3. Divide mixture into 6 equal portions and shape into patties about 3/4-inch thick. Chill for 15 minutes if mixture feels too sticky.
  4. Heat olive oil in a large skillet over medium-high heat. Add salmon cakes in batches and cook 3-4 minutes per side until golden brown and crispy.
  5. For the aioli, whisk together mayonnaise, sriracha, lime juice, and minced garlic. Taste and adjust heat level as needed.
  6. Serve Spicy Salmon Cakes immediately with sriracha aioli for dipping.

Notes

  • For best texture, don't overmix the salmon mixture
  • Panko breadcrumbs create the crispiest exterior
  • Let cooked salmon cool before flaking to prevent mushy cakes
  • Drain canned salmon well if using as a substitute
  • Aioli can be made up to 3 days in advance
