Ingredients
  

  • 1 pound ground pork 85/15 fat ratio preferred
  • 3 cloves garlic minced very fine
  • 1 tablespoon fresh ginger grated
  • 4 green onions thinly sliced, whites and greens separated
  • 2 tablespoons soy sauce low sodium preferred
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon kosher salt
  • 8 flour tortillas street taco size (6-inch)
  • 2 tablespoons vegetable or avocado oil for cooking
  • 1 cup napa cabbage finely shredded
  • 1/2 cup purple cabbage finely shredded
  • fresh cilantro for garnish
  • sesame seeds for sprinkling
  • chili crisp or sriracha for serving

Equipment

  • Large cast iron or nonstick skillet
  • Mixing bowl
  • Spatula or burger press
  • Measuring cups and spoons

Method
 

  1. Combine pork mixture: In a large bowl, mix ground pork, minced garlic, grated ginger, green onion whites, soy sauce, sesame oil, white pepper, and salt. Mix with hands or fork for 2 minutes until well combined and slightly sticky.
  2. Prepare tortillas: Divide pork mixture into 8 equal portions. Spread one portion evenly over one side of each tortilla, pressing thin and close to edges. Wet hands help prevent sticking.
  3. Heat pan: Heat a large cast iron or nonstick skillet over medium-high heat. Add oil to lightly coat surface. Heat until oil is shimmering and hot.
  4. Cook tacos: Place tortillas pork-side down in skillet. Immediately press down firmly with spatula or burger press. Hold for 30 seconds. Cook undisturbed for 3-4 minutes until pork is deeply browned and crispy.
  5. Flip and finish: Flip tacos and cook 1-2 minutes on tortilla side until golden and toasted. Remove from pan and repeat with remaining tacos.
  6. Serve: Top immediately with shredded cabbage mixture, green onion greens, cilantro, sesame seeds, and chili crisp. Serve hot.

Notes

  • For extra crispy tacos, press down firmly and don't move while cooking on pork side
  • Make sure pan is properly preheated before adding tacos
  • Pork mixture can be made up to 24 hours ahead and refrigerated
  • Best served immediately while crispy
  • Use street taco size tortillas for best results
