  • Bacon Bits: 3 tbsp for that essential salty, smoky crunch.

  1. Season the Chicken: In a medium bowl, combine the ground chicken, garlic powder, salt, and pepper. Mix gently with your hands or a fork until the seasonings are just combined. Be careful not to overwork the meat.
  2. Smash the Chicken: Lay out your tortillas on a clean work surface. Divide the chicken mixture evenly among the 8 tortillas. Spread a thin, even layer of the seasoned chicken on one side of each tortilla, pressing it down firmly so it adheres. Make sure to spread it almost to the edges.
  3. Cook the Tacos: Heat a large non-stick skillet or cast-iron pan over medium-high heat with a drizzle of avocado or olive oil. Carefully place one or two tortillas chicken-side down in the hot pan. Cook for 2-3 minutes, until the chicken is deeply golden brown, crispy, and fully cooked through.
  4. Crisp the Tortilla: Flip the tortilla and cook for another 30-60 seconds, just until the tortilla itself is lightly toasted and puffed up. Remove from the pan and repeat with the remaining tortillas.
  5. Assemble and Serve: In a separate bowl, you can toss the chopped romaine with the Caesar dressing, or you can add them separately. Top each taco with the fresh lettuce, a drizzle of dressing, a generous sprinkle of Parmesan cheese, and a few bacon bits. Fold them up and enjoy immediately!

Notes

For the best results, ensure your pan is very hot before adding the tortilla to get a crispy crust on the chicken. Spread the chicken in a thin, even layer to ensure it cooks quickly and evenly. To prevent the tacos from falling apart, handle them gently, do not overload them with toppings, and serve immediately after cooking.
