  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 1 tablespoon yellow or Dijon mustard
  • ½ teaspoon Cajun seasoning (or smoked paprika)
  • Dill pickle slices (Optional)
  • Fresh parsley, chopped (for garnish) (Optional)

  1. Preheat your air fryer to 400°F (200°C). In a medium bowl, toss the diced potatoes with olive oil, a generous pinch of salt, and a few cracks of black pepper. Arrange them in a single layer in the air fryer basket and cook for 16–18 minutes, shaking the basket halfway through to ensure they cook evenly.
  2. While the potatoes cook, heat a large skillet over medium-low heat. Add the diced onions and cook slowly for 10–15 minutes, stirring occasionally, until soft, sweet, and golden brown. Remove from skillet and set aside.
  3. In the same skillet, increase heat to medium-high. Add the ground beef, break into large chunks, and press them firmly into the pan. Cook undisturbed for 3-4 minutes to create crispy, browned edges. Then, break it into smaller pieces and cook until browned through, about 2-3 minutes. Season with salt and pepper.
  4. In a small bowl, whisk together the mayonnaise, ketchup, mustard, and Cajun seasoning until the sauce is smooth and creamy.
  5. To assemble, divide the crispy potatoes among bowls. Top with the smashed beef, caramelized onions, and shredded cheese. Drizzle with the special sauce and finish with fresh lettuce and optional toppings like pickles or parsley.

Notes

For the best results, caramelize onions slowly over low heat. Use a hot, heavy-bottomed skillet (like cast iron) for a better sear on the beef. To achieve maximum potato crispiness, pat them dry before cooking and do not overcrowd the air fryer. This recipe is suitable for meal prep; store cooked components separately in the fridge for 3-4 days. For a low-carb version, substitute potatoes with roasted cauliflower or zucchini noodles.
