  1. Prepare the Slow Cooker: Lightly grease the inside of your slow cooker crock with cooking spray or a little oil. Place the chicken breasts in a single layer at the bottom.
  2. Mix the Sauce: In a medium bowl, whisk together the BBQ sauce, honey, apple cider vinegar, garlic powder, onion powder, and smoked paprika until everything is well combined. Season generously with salt and pepper.
  3. Combine and Cook: Pour the honey BBQ sauce mixture evenly over the chicken breasts in the slow cooker, making sure each piece is coated. Cover the slow cooker and set it to cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours.
  4. Shred the Chicken: Once the chicken is fully cooked and tender, carefully remove it from the slow cooker and place it on a cutting board or in a large bowl. Using two forks, shred the chicken. It should fall apart very easily.
  5. Finish and Serve: Return the shredded chicken to the slow cooker and stir it into the sauce until it’s fully coated. Let it sit for about 10 more minutes to absorb all the flavor. Serve the honey BBQ chicken warm over a bed of fluffy rice, garnished with chopped green onions or cilantro if you like.

Notes

For a richer flavor, sear the chicken breasts for 2-3 minutes per side before adding to the slow cooker. You can substitute chicken thighs for breasts for a more moist and budget-friendly option. If the sauce is too thin, thicken it with a cornstarch slurry. Maple syrup or brown sugar can be used instead of honey, and red pepper flakes can be added for heat. Serve on buns for sandwiches, in tacos, or over baked potatoes.
