Ingredients
  

  • 1 1/2 pounds boneless skinless chicken thighs or breasts Cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon light brown sugar
  • 1 1/2 teaspoons smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper Optional
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper Freshly ground
  • 1/2 lemon lemon Thinly sliced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh dill Finely chopped
  • 1/4 cup fresh parsley Finely chopped
  • 2 tablespoons fresh chives Minced
  • 1 tablespoon lemon juice Freshly squeezed
  • 1/2 small head green cabbage Finely shredded
  • 4 pita breads
  • 1 ripe avocado Diced

Method
 

  1. Preheat the oven to 425°F and line a large sheet pan with parchment paper.
  2. Pat the chicken dry. Toss it with olive oil, brown sugar, smoked paprika, garlic powder, onion powder, cayenne, salt, and black pepper.
  3. Add the lemon slices, spread the chicken in a single layer, and roast for 15 minutes.
  4. Stir the chicken and roast for another 4 to 7 minutes, until the thickest piece reaches 165°F.
  5. Mix the Greek yogurt, dill, parsley, chives, lemon juice, and salt. Fold in the shredded cabbage and rest for 10 minutes.
  6. Warm the pitas, then fill them with slaw, roasted chicken, and diced avocado. Serve immediately.

Notes

  • Keep the chicken in a single layer for better browning.
  • Store the chicken, slaw, avocado, and pita separately for meal prep.
  • Chicken is safely cooked when the thickest piece reaches 165°F.
