Roasted Beets with Dill Cream

Ingredients
  

  • 2 pounds medium red beets scrubbed and trimmed
  • 3 tablespoons extra virgin olive oil divided
  • 1 teaspoon fine sea salt plus more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup full-fat Greek yogurt or sour cream
  • 1/4 cup fresh dill finely chopped, plus extra for garnish
  • 2 tablespoons lemon juice freshly squeezed
  • 1 small clove garlic minced very fine or grated
  • 1 teaspoon honey or maple syrup, optional
  • 2 tablespoons toasted walnuts or pistachios for serving

Method
 

  1. Preheat oven to 425°F and line a large baking sheet with parchment paper. Cut beets into 6-8 wedges each, keeping them uniform in size.
  2. Toss beet wedges with 2 tablespoons olive oil, salt, and pepper. Arrange in a single layer on the baking sheet with space between pieces.
  3. Roast for 25-30 minutes, flipping halfway through, until beets are fork-tender with caramelized brown spots.
  4. While beets roast, whisk together Greek yogurt, remaining 1 tablespoon olive oil, chopped dill, lemon juice, garlic, and honey if using. Taste and adjust seasoning.
  5. Let roasted beets cool for 5 minutes, then transfer to serving platter. Drizzle generously with dill cream sauce.
  6. Garnish with toasted nuts and extra fresh dill. Serve warm or at room temperature.

Notes

  • Wear gloves when handling raw beets to prevent staining
  • Sauce can be made 1 day ahead and refrigerated
  • Beets can be roasted up to 2 days in advance
  • For vegan version, use coconut yogurt or cashew cream
  • Golden or Chioggia beets work beautifully as alternatives
