Ingredients
  

  • 1 whole ripe peach peeled and chopped
  • 2 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 clove garlic small, minced
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/3 cup olive oil
  • 1 to 2 tbsp water optional, for thinning

Method
 

  1. Add the peach, balsamic vinegar, Dijon mustard, honey, garlic, salt, and pepper to a blender or food processor.
  2. Blend until smooth, then slowly add the olive oil while blending until the vinaigrette looks creamy and well combined.
  3. Taste and adjust with more vinegar, honey, or water if needed, then serve or chill until ready to use.

Notes

  • Use ripe peaches for the best flavor.
  • Shake well before serving if the dressing separates in the fridge.
  • Store in a sealed jar for up to 5 days.
