Ingredients
  

  • 2/3 cup heavy cream
  • 3 cups granulated sugar
  • 3/4 cup unsalted butter
  • 7 ounces marshmallow cream
  • 2 cups white chocolate chips
  • 3 teaspoons orange extract
  • as needed orange food coloring Add one drop at a time
  • 1/4 teaspoon fine salt

  • 9 x 13-inch baking pan
  • parchment paper
  • Heavy-bottomed saucepan
  • Candy thermometer
  • Wooden spoon or silicone spatula
  • Butter knife
  • Mixing bowl

Method
 

  1. Line a 9 x 13-inch pan with parchment paper, leaving an overhang for lifting.
  2. Combine the heavy cream, sugar, butter, and salt in a heavy saucepan over medium heat. Stir until the butter melts.
  3. Bring the mixture to a steady boil and cook until it reaches 235°F, stirring often.
  4. Remove from the heat and stir in the white chocolate chips and marshmallow cream until smooth.
  5. Reserve 1 cup of the vanilla mixture. Stir orange extract and food coloring into the remaining mixture.
  6. Pour the orange mixture into the pan. Add spoonfuls of the reserved white mixture and gently swirl with a knife.
  7. Refrigerate for at least 2 hours, then lift out and cut into squares.

Notes

  • Use a heavy-bottomed saucepan to reduce the risk of scorching.
  • Do not over-swirl the colors or the marble pattern may become muddy.
  • Store in an airtight container in the refrigerator for up to two weeks.
