One Pot Vegan Hamburger Helper

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium yellow onion finely diced
  • 3 cloves garlic minced
  • 1 cup dried brown or green lentils rinsed and drained
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt plus more to taste
  • 3 cups vegetable broth
  • 1 1/2 cups elbow macaroni or small pasta
  • 1/2 cup unsweetened plant milk oat or soy
  • 1/4 cup nutritional yeast
  • 2 tablespoons vegan cream cheese optional
  • fresh parsley chopped, for garnish

Equipment

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 5-6 minutes until softened.
  2. Add the minced garlic and cook for 30 seconds until fragrant, stirring constantly.
  3. Stir in the rinsed lentils, tomato paste, smoked paprika, oregano, chili powder, garlic powder, onion powder, salt, and pepper. Cook for 1-2 minutes.
  4. Pour in the vegetable broth and bring to a boil. Add the pasta and stir well.
  5. Reduce heat to medium-low, cover partially, and simmer for 10-12 minutes, stirring occasionally, until pasta is al dente.
  6. Stir in the plant milk, nutritional yeast, and vegan cream cheese if using. Mix until creamy.
  7. Taste and adjust seasoning. Serve hot, garnished with fresh parsley.

Notes

  • Stir frequently during the last few minutes to prevent sticking
  • Add more broth if the mixture looks too dry while cooking
  • The sauce will thicken as it cools
  • Store leftovers in the fridge for up to 4 days
