Ingredients

Ingredients
  • 1 pound Kielbasa, sliced into ½-inch rounds
  • 1 pound Baby Potatoes, halved or quartered
  • 1 red Bell Pepper, chopped into 1-inch pieces
  • 1 yellow Bell Pepper, chopped into 1-inch pieces
  • 1 cup Baby Carrots
  • 2 tablespoons Olive Oil
  • Salt and black pepper, to taste
  • 2 tablespoons Fresh Parsley or Green Onions, chopped, for garnish
  • 2 tablespoons Honey
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy Sauce (low-sodium recommended)

Equipment

  • Large baking sheet
  • parchment paper
  • Large bowl
  • Small bowl
  • Spatula

Method

Instructions
  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the baby potatoes and baby carrots with olive oil, a generous pinch of salt, and a few grinds of black pepper. Spread them in a single layer on the prepared baking sheet.
  3. Roast for 15-20 minutes, or until the potatoes are just starting to become tender.
  4. While the potatoes and carrots are roasting, prepare the sauce. In a small bowl, whisk together the honey, minced garlic, and soy sauce.
  5. Remove the baking sheet from the oven. Add the sliced kielbasa and chopped bell peppers to the pan with the potatoes and carrots.
  6. Pour the honey garlic sauce over everything on the pan. Toss gently with a spatula until all the ingredients are evenly coated.
  7. Return the pan to the oven and bake for another 10-15 minutes, or until the peppers are tender-crisp and the kielbasa is heated through and slightly caramelized at the edges.
  8. Remove from the oven, garnish with fresh parsley or green onions, and serve immediately.

Notes

For best results, do not crowd the pan; use two if necessary to ensure ingredients roast instead of steam. Add the sauce in the last 10-15 minutes of cooking to prevent the honey from burning. This recipe is adaptable; you can use turkey kielbasa, other proteins like shrimp, or make it low-carb by substituting potatoes with vegetables like broccoli and using a sugar-free honey substitute.
