Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup rolled oats or oat flour
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 cup fresh blueberries
  • 1 pinch salt
  • as needed butter or cooking spray for the pan

Method
 

  1. Preheat the oven to 350 F and grease a mini muffin tin well.
  2. Blend or whisk together the cottage cheese, eggs, maple syrup, vanilla, lemon zest, and lemon juice until mostly smooth.
  3. Stir in the oats, baking powder, and salt, then gently fold in the blueberries.
  4. Let the batter rest for 5 minutes so the oats can soften.
  5. Spoon the batter into the prepared tin, filling each cup about three quarters full.
  6. Bake for 15 to 18 minutes, or until the tops are set and lightly golden.
  7. Cool for a few minutes before removing, then serve warm with yogurt or extra berries.

  • Frozen blueberries can be used without thawing.
