Ingredients
  

  • 315 g all-purpose flour
  • 250 g granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine salt
  • 230 g unsalted butter softened
  • 2 lemons lemon zest finely grated
  • 3 large eggs at room temperature
  • 240 ml whole milk
  • 1 teaspoon vanilla extract
  • 60 ml lemon juice freshly squeezed
  • 90 g fresh blackberries roughly chopped
  • 180 g blackberry jam seedless if preferred
  • 225 g unsalted butter for frosting, softened
  • 250 g powdered sugar
  • 100 g white chocolate melted and slightly cooled
  • 2 tablespoons milk for frosting
  • 1 teaspoon vanilla extract for frosting
  • as needed fresh blackberries and lemon zest for decoration

Method
 

  1. Prepare the pan: Heat the oven to 180°C or 350°F. Grease and line a 23 x 33 cm baking pan with parchment paper.
  2. Mix the batter: Whisk flour, sugar, baking powder, and salt. Beat in butter until sandy. Add lemon zest, eggs, milk, vanilla, and lemon juice, mixing until smooth. Fold in blackberries.
  3. Bake: Spread the batter in the pan and bake for 30 to 35 minutes. Cool completely.
  4. Make the frosting: Beat butter until creamy. Add powdered sugar, milk, and vanilla. Beat in cooled melted white chocolate until smooth.
  5. Assemble: Cut three six-inch cake rounds. Layer cake, frosting, and blackberry jam twice. Finish with frosting, fresh blackberries, and lemon zest.
  6. Chill: Refrigerate the cake for at least two hours before slicing and serving.

Notes

  • Use room-temperature ingredients for a smoother batter.
  • Keep the cake chilled until the layers are firm.
  • Add fresh berries shortly before serving.
