Ingredients
  

  • 1 large head cauliflower cut into small bite-sized florets
  • 1 pound ground beef 80/20 lean-to-fat ratio
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 2 tablespoons butter
  • 2 cups sharp cheddar cheese shredded
  • 1 cup cream cheese softened
  • 1/2 cup heavy cream
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley chopped for garnish
  • 1/4 cup crushed pork rinds for topping

Method
 

  1. Cut the cauliflower into small bite-sized florets resembling macaroni. Steam or boil for 5 minutes until just tender. Drain well and pat completely dry with paper towels.
  2. In a large skillet over medium-high heat, brown the ground beef, breaking it up as it cooks. Add the diced onion during the last 3-4 minutes. Cook until beef is fully browned and onion is softened. Drain excess grease, leaving about 1 tablespoon.
  3. Reduce heat to low. Add butter to the skillet with the beef and let it melt. Stir in the softened cream cheese until smooth and creamy.
  4. Pour in the heavy cream gradually, stirring constantly. Add the cheddar cheese in batches, letting each handful melt completely before adding more.
  5. Season the cheese sauce with smoked paprika, garlic powder, salt, and black pepper to taste. Stir until smooth.
  6. Add the prepared cauliflower to the skillet. Toss gently to coat everything evenly with the cheese sauce. Simmer for 2-3 minutes to allow cauliflower to absorb flavors.
  7. Transfer to serving dish. Top with crushed pork rinds and garnish with fresh parsley. Serve immediately while hot and creamy.

Notes

  • Pat cauliflower completely dry to prevent watery sauce
  • Use freshly shredded cheese for smoothest melting
  • Don't rush the cheese melting process - low heat prevents grainy sauce
  • For extra richness, add an extra tablespoon of cream cheese
  • Roast cauliflower instead of steaming for deeper flavor
