  • 4 cups peaches fresh, frozen, or well-drained canned
  • 3/4 cup granulated sugar for the peach filling
  • 1 cup all-purpose flour
  • 1 cup granulated sugar for the batter
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3/4 cup whole milk
  • 8 tablespoons unsalted butter
  • 1/2 teaspoon ground cinnamon plus more for topping
  • 1 serving vanilla ice cream for serving

Method
 

  1. Preheat the oven to 350 F and prepare an 8x8 baking dish.
  2. Cook the peaches with 3/4 cup sugar over medium heat until softened and slightly thickened.
  3. Melt the butter in the baking dish in the oven.
  4. Whisk the flour, remaining sugar, baking powder, salt, milk, and cinnamon until just combined.
  5. Pour the batter over the melted butter without stirring.
  6. Spoon the peaches over the batter, top with extra cinnamon, and bake until golden.
