Ingredients
  

  • 3 pounds chicken thighs and drumsticks, skin on
  • 2 tablespoons browning sauce
  • 1 tablespoon brown sugar
  • 4 cloves garlic, minced
  • 3 scallions, chopped white and green parts separated
  • 1 tablespoon fresh ginger, grated
  • 2 sprigs fresh thyme
  • 1 scotch bonnet pepper whole
  • 1 teaspoon all-purpose seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt
  • 3 tablespoons vegetable oil
  • 1 large onion, sliced
  • 2 carrots, cut into chunks
  • 1 red bell pepper, sliced
  • 2 tablespoons ketchup
  • 3 cups chicken stock low sodium preferred
  • 2 bay leaves
  • 1 tablespoon soy sauce

Method
 

  1. In a large bowl, combine chicken pieces with browning sauce, brown sugar, garlic, white parts of scallions, ginger, thyme, scotch bonnet pepper, all-purpose seasoning, paprika, black pepper, and salt. Mix thoroughly, cover, and refrigerate for at least 2 hours or preferably overnight.
  2. Remove chicken from marinade, letting excess drip off. Reserve the marinade. Pat chicken pieces dry with paper towels for better browning.
  3. Heat vegetable oil in a large Dutch oven or heavy pot over medium-high heat until shimmering. Working in batches to avoid crowding, brown chicken pieces on all sides, about 5-6 minutes per side. Transfer browned chicken to a plate.
  4. Reduce heat to medium. Add sliced onion to the pot and cook until softened and golden, about 4-5 minutes, scraping up any browned bits from the bottom.
  5. Stir in reserved marinade, chicken stock, ketchup, soy sauce, and bay leaves. Bring to a boil, then reduce heat to low.
  6. Return browned chicken to the pot along with carrots. Cover and simmer gently for 35-40 minutes, turning chicken occasionally, until meat is tender and nearly falling off the bone.
  7. Add red bell pepper and green parts of scallions. Continue simmering uncovered for 15-20 minutes until sauce thickens to a rich gravy consistency that coats the back of a spoon.
  8. Remove scotch bonnet pepper and bay leaves before serving. Taste and adjust seasoning with salt and pepper if needed. Serve hot over rice and peas or with fried dumplings.

Notes

  • For deeper color, let the sugar caramelize longer before adding chicken, but watch carefully to prevent burning.
  • Scotch bonnet pepper can be left whole for mild heat or chopped for intense spice. Remove before serving if preferred.
  • This dish tastes even better the next day as flavors continue to develop. Store in refrigerator for up to 4 days.
  • To make in a pressure cooker, reduce stock to 2 cups and cook on high pressure for 15 minutes with natural release.
  • For crock pot version, brown chicken first, then transfer all ingredients to slow cooker and cook on low for 6 hours.
