Ingredients
  

  • 3 pounds chicken wings Split into drumettes and flats
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon fine salt Plus more if needed
  • 4 tablespoons unsalted butter
  • 2 teaspoons minced garlic
  • 1/2 cup peach preserves
  • 1/4 cup hot sauce Adjust to taste
  • 1 tablespoon soy sauce
  • 2 tablespoons honey
  • vegetable oil For frying

Method
 

  1. Pat the chicken wings completely dry, then season with paprika, garlic powder, and salt.
  2. Heat vegetable oil to 350°F in a deep fryer or heavy pot.
  3. Fry the wings in batches for 12 to 15 minutes, turning occasionally, until golden and cooked through.
  4. Melt the butter in a saucepan over medium-low heat. Add the minced garlic and cook for about 30 seconds.
  5. Stir in the peach preserves, hot sauce, soy sauce, and honey. Simmer for about 5 minutes until glossy and syrupy.
  6. Drain the wings briefly, transfer them to a bowl, and toss with the warm glaze until evenly coated.
  7. Serve immediately with ranch or blue cheese dressing, celery, and carrots if desired.

  • Pat the wings dry for better browning and crispness.
  • Fry in batches to prevent the oil temperature from dropping.
  • For an oven method, bake seasoned wings at 425°F until crisp and cooked through.
  • Refrigerate leftovers in an airtight container for up to three days.
