Ingredients
  

  • 1 bag frozen tater tots baked until crisp
  • 1 pound breakfast sausage
  • 3 tablespoons all-purpose flour
  • 2 to 2 1/2 cups whole milk
  • 1 teaspoon black pepper plus more to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 to taste salt
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter if needed for the skillet
  • 2 tablespoons sliced green onions optional

Method
 

  1. Bake the tater tots until crisp and golden according to package directions.
  2. Brown the breakfast sausage in a large skillet over medium heat, breaking it into crumbles.
  3. Sprinkle in the flour and stir for 1 to 2 minutes.
  4. Slowly whisk in the milk until the gravy is smooth.
  5. Season the sausage gravy with black pepper, garlic powder, onion powder, and salt.
  6. Cook the eggs in a separate skillet until done to your liking.
  7. Assemble the bowls with tater tots, eggs, cheddar cheese, and sausage gravy.
  8. Finish with green onions and serve immediately.

Notes

  • Serve immediately for the crispiest tots.
  • Add extra milk if the gravy thickens too much.
  • Freshly shredded cheese melts better than pre-shredded.
