Ingredients

  • 1 loaf French or Italian bread about 16 ounces, sliced in half lengthwise
  • 1/2 cup unsalted butter softened to room temperature
  • 6 cloves fresh garlic minced very finely
  • 1 head garlic for roasting
  • 2 tablespoons olive oil divided
  • 1/4 cup fresh parsley finely chopped
  • 1/4 cup parmesan cheese grated
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon dried Italian seasoning

Equipment

  • baking sheet
  • Medium bowl
  • Aluminum foil
  • Knife

Method

  1. Preheat oven to 400°F. Slice the top off the garlic head to expose cloves. Drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 40-45 minutes until golden and soft.
  2. In a medium bowl, combine softened butter, minced fresh garlic, chopped parsley, parmesan cheese, garlic powder, salt, pepper, and Italian seasoning.
  3. Once roasted garlic cools, squeeze cloves from skins and mash into the butter mixture until well combined.
  4. Spread garlic butter generously over both cut sides of the bread. Place halves back together and wrap tightly in foil.
  5. Bake wrapped bread for 10 minutes. Unwrap, separate halves, and place cut-side up on baking sheet.
  6. Bake uncovered for 5-7 minutes until golden and crispy. Slice and serve warm.

Notes

  • Use day-old bread for best results as it absorbs butter without getting soggy
  • Minced garlic should be very fine to prevent burning
  • Softened butter is essential for proper mixing
  • Can be assembled ahead and refrigerated before baking
