- Preheat the oven to 375°F (190°C). Lightly grease an 8x8 (or similar size) baking dish with cooking spray or olive oil.
- In a large mixing bowl, combine the cottage cheese, chopped broccoli, diced bell pepper, sliced zucchini, halved cherry tomatoes, spinach, and red onion. Stir gently to mix.
- In a separate, smaller bowl, whisk the two eggs until light. Add the olive oil, garlic powder, onion powder, black pepper, salt, and dried oregano, and whisk again until well combined.
- Pour the egg mixture over the vegetables and cottage cheese. Use a spatula to stir everything together until all vegetables are coated.
- Transfer the mixture into the prepared baking dish and spread it into an even layer.
- Sprinkle the shredded mozzarella cheese evenly over the top.
- Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
- Remove from the oven and let it cool for a few minutes to allow the bake to set before slicing and serving.
