Ingredients
  

  • 1 cup unsweetened applesauce room temperature
  • 2 large eggs room temperature
  • 1/3 cup pure maple syrup or honey
  • 1/4 cup melted coconut oil or butter, cooled slightly
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups whole wheat flour or white whole wheat
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon fine sea salt
  • 1/2 cup chopped walnuts or raisins optional

Equipment

  • 9x9 inch square baking pan
  • Large mixing bowls
  • Whisk

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch square baking pan or line with parchment paper.
  2. In a large bowl, whisk together applesauce, eggs, maple syrup, melted coconut oil, and vanilla until smooth and well combined.
  3. In a separate bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Stir thoroughly.
  4. Fold dry ingredients into wet ingredients using a spatula. Mix just until no flour streaks remain - do not overmix.
  5. If using, fold in walnuts or raisins gently.
  6. Pour batter into prepared pan and spread evenly with the back of a spoon.
  7. Bake for 30-35 minutes until toothpick inserted in center comes out clean or with few moist crumbs.
  8. Cool in pan for 10 minutes, then transfer to wire rack to cool completely before slicing.

Notes

  • Use room temperature ingredients for smoother batter and better rise
  • Don't overmix - fold gently to keep texture light and tender
  • Store in airtight container at room temperature up to 3 days or refrigerate up to 5 days
  • Freezes well - wrap individual slices and freeze up to 3 months
