Ingredients
  

  • 1 1/2 pounds boneless skinless chicken breasts or thighs cut into bite-size pieces
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked rice or quinoa
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/2 cup kalamata olives sliced
  • 3/4 cup feta cheese crumbled
  • 1 cup tzatziki sauce
  • 2 tablespoons parsley or dill chopped

Equipment

Method
 

  1. Mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a bowl.
  2. Add the chicken and toss until well coated.
  3. Cook the chicken in a hot skillet or grill pan until browned and cooked through.
  4. Prepare the rice or quinoa while the chicken cooks.
  5. Assemble the bowls with grains, then chicken, cucumber, tomatoes, red onion, olives, feta, and tzatziki.
  6. Finish with parsley or dill and serve immediately.
