Ingredients
  

  • 8 ounces dried egg noodles or chow mein noodles
  • 2 boneless skinless chicken breasts thinly sliced
  • 2 tablespoons vegetable oil divided
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 cups cabbage shredded
  • 1 large carrot julienned
  • 1 red bell pepper sliced
  • 1 cup bean sprouts
  • 3 green onions chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • sesame seeds for garnish

Method
 

  1. Cook noodles according to package directions until al dente. Drain and rinse under cold water. Toss with 1 teaspoon sesame oil to prevent sticking.
  2. Heat wok or large skillet over high heat until smoking. Add 1 tablespoon vegetable oil and swirl to coat.
  3. Add chicken in single layer. Let sear undisturbed for 1 minute, then stir-fry until nearly cooked through, about 3-4 minutes total.
  4. Push chicken to side. Add remaining oil, garlic, and ginger. Stir constantly for 15 seconds until fragrant.
  5. Add cabbage, carrot, and bell pepper. Stir-fry for 2-3 minutes until crisp-tender.
  6. Mix soy sauce, oyster sauce, remaining sesame oil, sugar, and white pepper in small bowl.
  7. Add cooked noodles and sauce to wok. Toss everything together for 1-2 minutes until well coated and heated through.
  8. Stir in bean sprouts and green onions. Cook for 30 seconds more. Garnish with sesame seeds and serve immediately.

Notes

  • Prep all ingredients before heating wok for best results
  • Don't overcrowd the pan - work in batches if needed
  • Use high heat for authentic wok hei flavor
  • Day-old noodles work even better than fresh
  • Adjust sauce to taste - add more soy for saltiness or sugar for sweetness
