Dump and Bake Chicken Tzatziki Casserole

This easy Mediterranean casserole combines tender chicken, fluffy rice, creamy tzatziki, feta, cucumber, lemon, and herbs in one convenient baking dish.

Ingredients
  

  • 1 cup long-grain white rice uncooked
  • 1 1/2 cups low-sodium chicken broth
  • 1 1/2 pounds boneless skinless chicken breasts cut into bite-sized pieces
  • 1 cup tzatziki sauce refrigerated
  • 1/2 cup crumbled feta cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika smoked or sweet
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium cucumber chopped or thinly sliced
  • 2 tablespoons fresh dill or parsley chopped
  • 1 tablespoon fresh lemon juice

Method
 

  1. Preheat the oven: Heat the oven to 375°F and lightly grease a 9-by-13-inch baking dish.
  2. Build the rice base: Spread the uncooked rice in the baking dish and pour the chicken broth over it.
  3. Add the chicken: Arrange the chicken pieces over the rice and season with garlic powder, onion powder, oregano, paprika, salt, and pepper.
  4. Add the tzatziki: Spoon the tzatziki over the chicken and spread it gently across the surface.
  5. Bake: Cover tightly with foil and bake for 40 to 45 minutes, until the rice is tender and the chicken reaches 165°F.
  6. Finish and serve: Rest for 5 minutes, then add cucumber, feta, dill, and lemon juice.

Notes

  • Thaw frozen chicken completely before cutting and using it in this recipe.
  • Keep the dish tightly covered during the main baking time so the rice cooks properly.
  • Store leftovers in the refrigerator for up to 4 days.
  • Reheat with a splash of broth or water and add fresh toppings after warming.
