  1. Season and Cook the Chicken: Start by patting your chicken breasts dry with a paper towel; this helps them get extra crispy. Season both sides generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Once the oil shimmers, carefully place the chicken in the pan. Cook for about 5-6 minutes per side, until the chicken is golden brown, crispy, and cooked through. Avoid moving it around too much to allow a nice crust to form. Once cooked, remove the chicken from the skillet and set it aside on a plate.
  2. Start the Creamy Garlic Sauce: Lower the heat to medium-low. In the same skillet, add the minced garlic and sauté for about 30 seconds until it's fragrant. Be careful not to let it burn, as it can become bitter.
  3. Build the Sauce: Pour in the cream, stirring continuously with a whisk or wooden spoon to scrape up any flavorful browned bits from the bottom of the pan. This is where so much flavor lives!

To make a smooth cream sauce, control the temperature by using low heat when adding the cream and cheese, and use freshly grated Parmesan. Use a meat thermometer to check for an internal temperature of 165°F for perfectly cooked chicken. You can substitute chicken with pork chops or tofu, and make the sauce dairy-free with coconut cream and nutritional yeast.
