Pat the steak pieces dry with paper towels, then season them with salt and black pepper.
In a bowl, combine the softened butter, garlic, parsley, chives, Dijon mustard, smoked paprika, lemon juice, and red pepper flakes. Set aside.
Heat a large skillet over medium-high heat. Add the olive oil once hot.
Place the steak in a single layer and sear for 1 to 2 minutes without moving. Turn the pieces and cook for another 2 to 4 minutes, depending on desired doneness.
Transfer the steak bites to a plate and reduce the heat to medium.
Add half of the cowboy butter to the skillet and stir for about 30 seconds, scraping up the browned bits.
Return the steak bites to the pan and toss gently until coated. Turn off the heat.
Serve immediately with the remaining garlic herb butter spooned over the steak.
