Ingredients
  

  • 2 cups elbow macaroni
  • 1 cup mayonnaise full fat preferred
  • 1/2 cup milk
  • 1/2 cup grated carrot
  • 1/4 cup finely chopped onion
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • salt and black pepper to taste

Method
 

  1. Cook elbow macaroni slightly past al dente until soft, then drain well.
  2. While still warm, toss the pasta with apple cider vinegar and let it cool.
  3. In a large bowl, mix mayonnaise and milk until smooth and creamy.
  4. Add grated carrot, chopped onion, sugar, salt, and pepper, then stir to combine.
  5. Fold the cooled macaroni into the dressing until evenly coated.
  6. Cover and refrigerate for at least 2 hours to allow flavors to develop.
  7. Stir gently before serving and adjust with a splash of milk if needed.

Notes

  • Cook pasta slightly longer than usual for authentic Hawaiian texture.
  • Chilling improves flavor and consistency.
  • Add a bit of milk before serving if the salad thickens too much.
