Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup light brown sugar
  • 6 tablespoons unsalted butter melted
  • 1/2 teaspoon fine salt
  • 16 ounces full-fat cream cheese softened
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 1/2 cup sour cream room temperature
  • 2 teaspoons vanilla extract
  • 6 tablespoons unsalted butter melted, for swirl
  • 1 cup dark brown sugar packed
  • 1 teaspoon ground cinnamon
  • 1/4 cup all-purpose flour

Method
 

  1. Prepare the crust: Heat the oven to 350°F. Line an 8-inch square pan with parchment. Mix graham cracker crumbs, light brown sugar, melted butter, and salt. Press firmly into the pan and bake for 8 minutes.
  2. Make the filling: Reduce the oven to 325°F. Beat softened cream cheese, granulated sugar, and vanilla until smooth. Add sour cream, then beat in the eggs one at a time.
  3. Create the cinnamon swirl: Stir melted butter, dark brown sugar, cinnamon, and flour together until thick and smooth.
  4. Layer the bars: Pour half the cheesecake filling over the cooled crust. Add half the cinnamon mixture and swirl gently with a thin knife. Repeat with the remaining filling and swirl mixture.
  5. Bake and chill: Bake for 35 to 40 minutes, until the edges are set and the center slightly wobbles. Cool completely, then refrigerate for at least 2 hours before slicing.

Notes

  • Use softened cream cheese and room-temperature eggs for a smooth filling.
  • Do not overmix after adding the eggs.
  • Store covered in the refrigerator for up to 4 days.
  • Freeze individually wrapped bars for up to 1 month.
