Chocolate Raspberry Tart Recipe

This decadent Chocolate Raspberry Tart features a buttery Oreo crust, silky dark chocolate ganache, and fresh raspberries. An elegant dessert that's surprisingly easy to make.

Ingredients
  

  • 1 ½ cups Oreo cookie crumbs about 24 regular cookies
  • 6 tablespoons unsalted butter melted
  • 1 ¼ cups heavy cream
  • 12 ounces bittersweet chocolate finely chopped, 60-70% cacao
  • 1 teaspoon pure vanilla extract
  • 2 pints fresh raspberries for topping
  • powdered sugar for dusting, optional

Method
 

  1. Preheat oven to 325°F. Crush Oreo cookies in a food processor until fine crumbs form. Add melted butter and pulse until combined.
  2. Press crumb mixture firmly into the bottom and slightly up the sides of a 9-inch tart pan with removable bottom. Bake for 10 minutes, then cool completely on a wire rack.
  3. Heat heavy cream in a small saucepan over medium heat until tiny bubbles form at the edges. Do not boil.
  4. Place chopped chocolate in a heatproof bowl. Pour hot cream over chocolate and let sit undisturbed for 5 minutes.
  5. Add vanilla extract and whisk gently from center outward until smooth and glossy. Pour ganache into cooled crust and spread evenly with an offset spatula.
  6. Let tart set at room temperature for 2-3 hours or refrigerate for 1 hour until firm.
  7. Arrange fresh raspberries in concentric circles on top of ganache. Dust lightly with powdered sugar if desired. Slice and serve.

Notes

  • For clean slices, dip a sharp knife in hot water and wipe dry between cuts
  • Pat raspberries dry before arranging to prevent weeping
  • Tart keeps in refrigerator for up to 3 days in an airtight container
  • Let sit at room temperature for 10 minutes before serving for best texture
