Ingredients
  

  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream cold
  • 1 cup raspberries fresh or frozen
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch mixed with 1 tablespoon water
  • 1 1/2 cups chocolate cookie crumbs
  • 4 tbsp melted butter
  • 8 oz semi-sweet chocolate chopped
  • 1/2 cup heavy cream for the ganache

Method
 

  1. Cook raspberries, sugar, and lemon juice until softened, then stir in the cornstarch slurry and cool completely.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth, then fold in whipped cream for a light cheesecake filling.
  3. Mix chocolate cookie crumbs with melted butter and press into dome molds to form the base.
  4. Fill each mold with cheesecake mixture, add the raspberry center, cover with more filling, and chill until firm.
  5. Heat heavy cream, pour over chopped chocolate, stir into a smooth ganache, and spoon over the domes before serving.

Notes

    >Chill the domes well before unmolding for the cleanest shape. >Use a warm spoon or spatula to smooth the tops if needed. >Decorate with fresh raspberries or chocolate curls for a polished finish.
