Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs room temperature
  • 1 cup buttermilk room temperature
  • 1 cup strong brewed coffee hot
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 12 ounces semi-sweet chocolate chips
  • 1 cup heavy whipping cream cold
  • 1/2 cup mini marshmallows
  • 1/4 cup whole milk
  • 4 tablespoons unsalted butter

Method
 

  1. Preheat oven to 350°F. Grease a 9x13 inch baking pan or line with parchment paper.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt until no lumps remain.
  3. Add eggs, buttermilk, hot coffee, oil, and vanilla. Beat on medium speed for 2 minutes until smooth. Batter will be thin.
  4. Pour batter into prepared pan. Bake for 30-40 minutes until toothpick inserted in center comes out clean.
  5. Cool cake completely in pan on wire rack before adding mousse.
  6. For mousse, combine mini marshmallows, chocolate chips, and milk in heavy saucepan over low heat. Stir constantly until melted and smooth.
  7. Remove from heat and cool to lukewarm, stirring occasionally.
  8. In separate bowl, whip cold heavy cream until stiff peaks form.
  9. Gently fold cooled chocolate mixture into whipped cream until no white streaks remain.
  10. Spread mousse evenly over cooled cake. Refrigerate for at least 4 hours or overnight before slicing.
  11. Slice with sharp knife dipped in hot water. Serve chilled.

Notes

  • Cake can be made 1 day ahead and stored covered in refrigerator
  • For clean slices, chill overnight and use hot knife
  • Coffee enhances chocolate flavor but can be substituted with hot water
  • Freeze individual slices wrapped in plastic and foil for up to 2 months
