Ingredients
  

  • 12 oz linguine or spaghetti
  • 3 cups cooked chicken diced or shredded
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 8 oz mushrooms sliced
  • 1/3 cup all-purpose flour
  • 3 cups low-sodium chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 tsp salt plus more for pasta water
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup frozen peas
  • 2 tbsp chopped parsley
  • 1/2 cup breadcrumbs for topping

Method
 

  1. Cook linguine until just al dente, then drain and set aside.
  2. Warm olive oil and butter in a skillet, then cook the onion until soft.
  3. Add the garlic and mushrooms, cooking until browned and fragrant.
  4. Stir in the flour and cook briefly, then slowly whisk in the broth, milk, and cream.
  5. Season with salt, pepper, and thyme, then simmer until lightly thickened.
  6. Fold in the chicken, peas, pasta, half the mozzarella, and half the Parmesan.
  7. Transfer to a baking dish, top with remaining cheese and breadcrumbs, then bake until bubbly and golden.
  8. Finish with parsley and serve warm.

Notes

  • Use rotisserie chicken for a faster meal.
  • Do not overcook the pasta before baking.
  • Add a splash of broth if the sauce thickens too much.
