Chicken Avocado Melt Sandwich

Ingredients
  

  • 2 boneless skinless chicken breasts pounded to even thickness
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • to taste salt and freshly ground black pepper
  • 2 tablespoons olive oil for cooking chicken
  • 1 large ripe avocado sliced
  • 4 slices white cheddar or Swiss cheese
  • 4 slices sourdough bread about 1/2 inch thick
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons butter softened for grilling
  • 1 small red onion thinly sliced, optional
  • 1 medium tomato sliced, optional
  • as needed fresh cilantro or microgreens for garnish, optional

Method
 

  1. Season both sides of chicken breasts with garlic powder, smoked paprika, cumin, salt, and pepper. Let rest for 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F. Remove and rest for 5 minutes before slicing thinly.
  3. Mix mayonnaise and Dijon mustard in a small bowl. Spread on one side of each bread slice.
  4. On two bread slices, layer cheese, sliced chicken, avocado slices, and another slice of cheese. Top with remaining bread, spread side facing out.
  5. Butter a skillet over medium heat. Grill sandwiches for 3-4 minutes per side until golden and cheese is melted. Press gently with spatula. Cool 2 minutes before serving.

Notes

  • Pound chicken to even thickness for uniform cooking
  • Use ripe but firm avocados to prevent mushiness
  • Don't skip resting time for chicken, it keeps it juicy
  • Grill on medium heat to avoid burning before cheese melts
  • Brush avocado with lime juice if prepping ahead to prevent browning
