Ingredients
  

  • 4 cups zucchini grated and well drained
  • 1 teaspoon salt for drawing out moisture
  • 1 large egg
  • 1/2 cup mozzarella cheese shredded
  • 1/3 cup Parmesan cheese grated
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1 cup mozzarella cheese for topping

Method
 

  1. Preheat the oven to 425F and line a baking sheet with parchment paper.
  2. Grate the zucchini, sprinkle with salt, and let it sit for about 10 minutes to release moisture.
  3. Wrap the zucchini in a clean towel and squeeze out as much water as possible.
  4. In a mixing bowl, combine the zucchini with egg, mozzarella, Parmesan, garlic powder, Italian seasoning, and black pepper.
  5. Spread the mixture into a thin rectangle on the prepared baking sheet.
  6. Bake until set and lightly golden, then top with the remaining mozzarella cheese.
  7. Return to the oven until the cheese melts, then cool slightly and slice into breadsticks.

Notes

  • Dry zucchini gives the best texture.
  • Serve warm with marinara sauce.
  • Store leftovers in the refrigerator for up to 3 days.
