Ingredients

Ingredients
  • 1 package (13.8 ounces) refrigerated pizza dough
  • 1/2 cup pizza sauce, plus more for dipping
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup pepperoni slices, quartered
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 egg, beaten (for egg wash)

Equipment

  • baking sheet
  • Small bowl
  • sharp knife

Method

Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet or line it with parchment paper for easy cleanup.
  2. Gently unroll the pizza dough onto a lightly floured surface. Carefully stretch or roll it into a rectangle, roughly 12x16 inches.
  3. Spread the pizza sauce in a thin, even layer over the dough, making sure to leave about a 1/2-inch border clean on all sides.
  4. Sprinkle 1 1/2 cups of the shredded mozzarella cheese evenly over the sauce.
  5. Scatter the quartered pepperoni slices over the cheese layer.
  6. Sprinkle the grated Parmesan cheese and the red pepper flakes (if you like a little heat) over the pepperoni.
  7. Starting from one of the long edges, roll the dough up as tightly as you can into a log. Pinch the seam at the end to seal it completely.
  8. Using a sharp knife, carefully slice the log into 1-inch thick slices. You should get about 12 to 16 rolls.
  9. Arrange the roll-ups on your prepared baking sheet with the cut-side facing up. Give them a little space to expand.
  10. In a small bowl, mix together the remaining 1/2 cup of mozzarella, the olive oil, garlic powder, and dried oregano.
  11. Spoon this savory cheese and herb mixture evenly over the tops of the roll-ups.
  12. Lightly brush the tops and sides of the roll-ups with the beaten egg. This will give them a beautiful golden sheen.
  13. Bake for 20-25 minutes. They’re done when the tops are golden brown and the cheese is melted and bubbly.
  14. Let them cool on the baking sheet for a few minutes before serving. They are best served warm with extra pizza sauce for dipping.

Notes

Tips: Do not overfill the roll ups to prevent them from bursting. Use a sharp, serrated knife for clean slices. Make Ahead: Assemble and slice the rolls, then refrigerate covered for up to 24 hours before baking. Storage: Store cooled leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in an oven or air fryer. Freezing: Freeze unbaked or baked rolls for up to 3 months. Bake from frozen, adding 10-15 minutes to the baking time.
