- Preheat your oven to 375°F (190°C) and lightly grease a baking sheet or line it with parchment paper for easy cleanup.
- Gently unroll the pizza dough onto a lightly floured surface. Carefully stretch or roll it into a rectangle, roughly 12x16 inches.
- Spread the pizza sauce in a thin, even layer over the dough, making sure to leave about a 1/2-inch border clean on all sides.
- Sprinkle 1 1/2 cups of the shredded mozzarella cheese evenly over the sauce.
- Scatter the quartered pepperoni slices over the cheese layer.
- Sprinkle the grated Parmesan cheese and the red pepper flakes (if you like a little heat) over the pepperoni.
- Starting from one of the long edges, roll the dough up as tightly as you can into a log. Pinch the seam at the end to seal it completely.
- Using a sharp knife, carefully slice the log into 1-inch thick slices. You should get about 12 to 16 rolls.
- Arrange the roll-ups on your prepared baking sheet with the cut-side facing up. Give them a little space to expand.
- In a small bowl, mix together the remaining 1/2 cup of mozzarella, the olive oil, garlic powder, and dried oregano.
- Spoon this savory cheese and herb mixture evenly over the tops of the roll-ups.
- Lightly brush the tops and sides of the roll-ups with the beaten egg. This will give them a beautiful golden sheen.
- Bake for 20-25 minutes. They’re done when the tops are golden brown and the cheese is melted and bubbly.
- Let them cool on the baking sheet for a few minutes before serving. They are best served warm with extra pizza sauce for dipping.

Tips: Do not overfill the roll ups to prevent them from bursting. Use a sharp, serrated knife for clean slices. Make Ahead: Assemble and slice the rolls, then refrigerate covered for up to 24 hours before baking. Storage: Store cooled leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in an oven or air fryer. Freezing: Freeze unbaked or baked rolls for up to 3 months. Bake from frozen, adding 10-15 minutes to the baking time.
