Brownie Ice Cream Bombes

Decadent chocolate brownie domes filled with vanilla ice cream and surprise Nutella centers, coated in chocolate and Heath toffee bits. The ultimate chocolate-covered ice cream dessert that's surprisingly easy to make at home.

Ingredients
  

  • 1 box fudge brownie mix 18-20 oz, baked according to package directions
  • 1 pint premium vanilla ice cream slightly softened
  • 1/2 cup chocolate hazelnut spread like Nutella, room temperature
  • 12 oz semisweet chocolate chips melted with 1 tablespoon coconut oil
  • 1/2 cup Heath English toffee bits for coating

Equipment

  • 12-cup muffin tin
  • 3-inch round cookie cutter
  • Ice cream scoop
  • Microwave-safe bowl
  • Plastic wrap

Method
 

  1. Bake brownies according to package directions in a 9x13 pan. Let cool completely, then flip out onto a cutting board. Using a 3-inch round cookie cutter, cut out 12 circles from the brownie sheet.
  2. Line a 12-cup muffin tin with plastic wrap, letting the wrap hang over the edges. Press one brownie circle into each cup, molding it to create a bowl shape that covers the bottom and sides.
  3. Scoop about 2 tablespoons of softened ice cream into each brownie-lined cup. Press down gently to eliminate air pockets. Add 1 teaspoon of Nutella to the center of each, then top with another tablespoon of ice cream.
  4. Place another brownie circle on top, pressing the edges to seal everything together. Wrap the plastic overhang tightly around each bombe and freeze for at least 3 hours or overnight.
  5. Once completely frozen, unwrap and dip each bombe into the melted chocolate mixture, then roll in Heath toffee bits. Return to the freezer for 30 minutes to set the chocolate coating.
  6. Let sit at room temperature for 5 minutes before serving. Serve with extra caramel sauce or whipped cream if desired.

Notes

  • Work quickly during assembly to prevent ice cream from melting too much
  • If ice cream gets too soft, pop everything back in freezer for 15 minutes before continuing
  • For smoothest chocolate coating, ensure melted chocolate is warm but not hot (consistency like warm honey)
  • Brownies should be slightly underdone for flexibility when pressing into muffin cups
  • Store wrapped tightly in freezer for up to 2 weeks
