Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon fine salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon zest finely grated
  • 1 large egg room temperature
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries divided
  • 1 cup powdered sugar for glaze
  • 1 to 2 tablespoons fresh lemon juice for glaze

Method
 

  1. Prepare the pan: Heat the oven to 350°F and line an 8-inch square pan with parchment paper.
  2. Mix the dry ingredients: Whisk together the flour, baking powder, and salt.
  3. Cream the butter mixture: Beat the softened butter, sugar, and lemon zest until creamy and light.
  4. Add the wet ingredients: Beat in the egg, lemon juice, and vanilla extract.
  5. Make the batter: Stir in the dry ingredients just until combined, then gently fold in 3/4 cup blueberries.
  6. Bake: Spread the batter in the pan, top with the remaining blueberries, and bake for 28 to 34 minutes.
  7. Cool: Let the blondies cool completely before removing them from the pan.
  8. Glaze: Whisk powdered sugar with lemon juice until thick and pourable, then drizzle over the cooled blondies.
  9. Slice and serve: Let the glaze set for 15 minutes, then cut into 16 squares.

Notes

  • Do not overmix the batter after adding flour.
  • Frozen blueberries may be used without thawing.
  • Cool completely for the cleanest slices.
  • Store in an airtight container for up to three days at room temperature.
