Beef Stir Fry with Vegetables

Ingredients
  

  • 1 pound flank steak or sirloin thinly sliced against the grain
  • 2 tablespoons soy sauce for marinade
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 2 tablespoons vegetable oil for cooking
  • 1 red bell pepper thinly sliced
  • 1 cup broccoli florets
  • 1 large carrot julienned
  • 1/2 cup snap peas ends trimmed
  • 2 green onions chopped for garnish
  • 1 tablespoon sesame seeds for garnish
  • steamed rice for serving

Equipment

  • Wok or large skillet
  • Cutting board

Method
 

  1. Slice beef thinly against the grain. Marinate in 2 tablespoons soy sauce, half the garlic, and half the ginger for 15-30 minutes if time allows.
  2. Whisk together sauce with remaining soy sauce, hoisin sauce, sesame oil, honey, and remaining garlic and ginger. Set aside.
  3. Heat wok or skillet over high heat until almost smoking. Add 1 tablespoon vegetable oil.
  4. Sear beef in single layer for 2 minutes without stirring, then flip and cook 1 more minute. Remove to plate.
  5. Add remaining oil to pan. Stir fry carrots, bell pepper, and broccoli for 3-4 minutes.
  6. Add snap peas and cook 2 more minutes until vegetables are tender-crisp.
  7. Return beef to pan with prepared sauce. Stir everything together and cook 1-2 minutes until sauce thickens slightly.
  8. Garnish with green onions and sesame seeds. Serve over steamed rice.

Notes

  • Slice beef against the grain for maximum tenderness
  • Prep all ingredients before cooking starts
  • Use high heat for proper searing
  • Don't overcrowd the pan
  • Vegetables should stay crisp, not mushy
