Ingredients

Ingredients
  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened to room temperature
  • ½ cup shredded cheddar cheese (or a Mexican blend)
  • ¼ cup salsa (your favorite kind)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 10 small flour or corn tortillas
  • Cooking spray or olive oil for brushing

Equipment

  • baking sheet
  • parchment paper
  • Large bowl
  • Microwave
  • Wire rack (optional)

Method

Instructions
  1. Preheat Oven & Prep: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Make the Creamy Filling: In a large bowl, combine the shredded chicken, softened cream cheese, cheddar cheese, salsa, garlic powder, onion powder, and cumin. Mix until well-combined and creamy. Season with salt and pepper to taste.
  3. Warm Tortillas & Assemble: Warm tortillas for 20-30 seconds in the microwave to make them pliable. Spoon about 2-3 tablespoons of the chicken filling in a line down the center of each tortilla. Roll it up tightly and place it seam-side down on the prepared baking sheet. Repeat with the remaining tortillas.
  4. Bake to Golden Perfection: Lightly spray the taquitos with cooking spray or brush them with olive oil. Bake for 15-18 minutes, or until they are crispy and lightly browned.
  5. Serve and Enjoy: Let them cool for a minute or two before serving. Serve with your favorite dips like sour cream, guacamole, or extra salsa.

Notes

For the best results, ensure your cream cheese is at room temperature to avoid clumps. Using a rotisserie chicken saves prep time. Warm tortillas before rolling to prevent them from cracking. For an extra crispy finish, bake them on a wire rack and do not overcrowd the pan. These can also be made in an air fryer at 400°F (200°C) for 8-10 minutes.
