Ingredients
  

  • 2 medium apples peeled, cored, and diced small
  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon fine salt
  • 2 large eggs
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter melted and slightly cooled
  • 1 1/2 cups powdered sugar for the glaze
  • 2 to 3 tablespoons milk for the glaze
  • 1/2 teaspoon ground cinnamon for the glaze
  • 1/2 teaspoon vanilla extract for the glaze

Method
 

  1. Prepare the oven: Heat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Mix the dry ingredients: Whisk the flour, sugar, baking powder, cinnamon, nutmeg, and salt in a large bowl.
  3. Mix the wet ingredients: Whisk the eggs, milk, vanilla, and melted butter in a separate bowl.
  4. Make the batter: Stir the wet mixture into the dry ingredients just until combined. Fold in the diced apples.
  5. Bake: Scoop the batter onto the baking sheet and bake for 18 to 22 minutes, until puffed and lightly golden.
  6. Make the glaze: Whisk the powdered sugar, cinnamon, vanilla, and milk until smooth and pourable.
  7. Finish: Cool the fritters for five minutes, drizzle with glaze, and let set for about ten minutes.

Notes

  • Do not overmix the batter, or the fritters may become dense.
  • Dice the apples small for even baking.
  • Store glazed fritters in an airtight container for up to two days at room temperature.
